Iced Lemon Cucumber Matcha

Is Matcha worth all its glamour? There are plenty of health benefits to be garnered from matcha when consumed in its natural ground form. The caffeine content is higher than steeped tea and some coffee, which some studies show can help to boost mood and reduce stress.

We love this lightly sweetened Iced Cucumber Lemon Matcha for that very reason. Other than a spoonful of sugar, our recipe calls for few added calories. It also seems perfect for that midday caffeine boost, just when you need it!

Iced Lemon Cucumber Matcha

Other than a spoonful of sugar, our recipe for Iced Lemon Cucumber Matcha calls for few added calories. It also seems perfect for that midday caffeine boost, just when you need it!  

Serving Size: 12 fl oz; Makes 1 serving


Ingredients

3/4 teaspoon unsweetened matcha powder
9 fluid ounces warm water
1 1/2 tablespoons sugar
1 1/2 tablespoons water
2 English cucumber ribbons (see step 3)
3 tablespoons lemon juice

Instructions

  1. Whisk matcha powder into warm water until dissolved. Chill.
  2. Make a simple syrup by combining sugar and 1 1/2 tablespoons water in a pot. Bring mixture to a simmer and stir until sugar is dissolved. Chill mixture.
  3. To make cucumber ribbons, cut cucumber in half width wise.  Use a mandolin or vegetable peeler slice ribbons lengthwise.  
  4. Combine matcha tea mixture, simple syrup, and lemon juice and pour over ice. Garnish with cucumber slices.
