Low Sodium Carrot Miso Dressing

Mastering a Homemade Salad Dressing is an excellent way to get creative and change up flavors for your salads (and marinades!) This month, right as we prepare for the Bunny's Bounty, we're sharing our favorite Low Sodium Carrot Miso Dressing.

Low Sodium Carrot Miso Dressing

Serving Size: 1 fluid ounce

Makes: 14 servings


Ingredients

1 cup carrots, chopped
1/4 cup rice wine vinegar
2 tsp white miso paste
2 1/2 tbsp fresh ginger, minced
1 1/2 tbsp yellow onion, chopped
1/8 tsp salt
1/2 cup canola oil

Instructions

1. Combine carrots, vinegar, miso, ginger, onion, and salt in a blender. Puree until smooth.

2. Continue to blend while streaming in canola oil until dressing is emulsified.

3. Strain dressing through a fine-mesh strainer.

Nutrition Information per Serving: 70 calories, 7g fat, 0g saturated fat, 55mg sodium, 0g protein, 1g carbohydrates, 0g fiber, 0g sugar
