Tuscan Lentil Soup

Zuppa Di Lenticchie, or Tuscan Lentil Soup, is the perfect budget friendly recipe for an end-of-winter night. This hearty soup combines pantry staples such as carrots, onions, celery and potatoes with fresh tomatoes and dry lentils. The meal comes together in under an hour, and pairs well with a slice of crusty whole grain bread and a side salad, such as our Kale, Citrus, Feta Salad.

Serving Size: 8 fluid ounces, makes 8 servings


Ingredients

1 tbsp. olive oil
2 oz. celery, diced
4 oz. yellow onions, diced
4 oz. carrots, diced
3/4 tsp. garlic, minced
6 cups low sodium vegetable broth
4 oz. potatoes, medium dice
1/2 lb. lentils, dry
3 oz. tomatoes, fresh, peeled, diced
3/4 tsp. lemon zest
2 tbsp. basil, fresh, chopped
1-1/2 tsp. salt
2 tsp. lemon juice

Instructions

1. Heat olive oil in a heavy bottom pot. Sauté celery, onions and carrots until tender. Add garlic and sauté until fragrant, about 1 minute.

2. Add vegetable broth, potatoes and lentils. Bring to a boil, reduce heat, simmer and cook for 45 minutes, until lentils are tender.

3. Add tomatoes, lemon zest, basil, salt and lemon juice. Simmer an additional 10 minutes.
