Tofu, Mushroom, Water Chestnut Lettuce Wraps

This plant-based meal in minutes uses ground, extra firm tofu to mimic the texture and consistency of ground meat while providing the body with protein, calcium and iron. Garlic, ginger and red pepper flakes heat things up while keeping this low calorie meal bursting with flavor.

Tofu, Mushroom, Water Chestnut Lettuce Wraps

Makes 8 servings


Ingredients

1-3/4 lb. extra firm tofu, drained
1 lb. cremini mushrooms
1 lb. water chestnuts, drained, diced
2 tsp. sesame oil
2 tbsp. canola oil
1-1/2 tbsp. garlic, minced
1-1/2 tbsp. ginger root, peeled, minced
1/4 c. hoisin sauce
1/4 c. soy sauce, less sodium
2 tbsp. rice vinegar
3/4 tsp. red pepper flakes
2 tbsp. lime juice
16 ea. leaf lettuce
2 c. carrots, julienned
1/2 c. scallions, thinly sliced

Instructions

1. Press tofu for at least 1 hour between paper towels and something heavy (cookbook, pan, cutting board) on top to press out all excess moisture (tofu can also be left to press in the refrigerator overnight).
2. Crumble pressed tofu.
3. Clean and finely chop cremini mushrooms.
4. Heat sesame and canola oil in a sauté pan. Add crumbled tofu and cook for 5 minutes.
5. Add diced mushrooms. Continue cooking until liquid is cooked out and mushrooms and tofu begin to caramelize.
6. Add garlic, ginger and diced water chestnuts. Cook until fragrant.
7. Add hoisin, soy sauce, rice vinegar, chili flakes and lime juice, cooking until sauce is slightly reduced.
8. Remove filling from the heat.
9. Fill each lettuce leaf with ½ cup tofu mushroom filling, 2 tbsp. julienned carrot, and ½ tbsp. green onion.
