Teriyaki Brown Rice Edamame Burger, Marinated Cucumbers

Teriyaki Brown Rice Edamame Burger, Marinated Cucumbers

Serving size: 1 burger  |  Makes 6 servings


Ingredients

FOR THE CUCUMBER SALAD
1-1/2 English cucumbers, peeled and thinly sliced
1/4 teaspoon salt
1/3 cup white wine vinegar
1/4 cup sugar
1/2 teaspoon freshly chopped chervil or parsley
1/8 teaspoon ground black pepper
FOR THE BURGER PATTY
1-1/2 TBSP ground flaxseed
1/4 cup warm water
3/4 cup steamed brown rice
1 pound frozen shelled edamame, thawed
2/3 cups panko breadcrumbs
2 TBSP teriyaki sauce
1/4 tsp salt
TO SERVE
6 whole wheat hamburger buns

Instructions

  1. Prepare the cucumber salad. Sprinkle sliced cucumbers with salt and toss. Set cucumbers on paper towels and place something heavy on top, like a cutting board with cookbooks. Let sit for at least one hour. In a medium bowl, mix vinegar and sugar together until sugar dissolves. Remove any excess water from the cucumbers and add them to the vinegar mixture. Add chopped chervil or parsley and black pepper and toss to combine. Refrigerate. 
  2. Prepare the burgers. In a small bowl, combine ground flax and warm water. Allow to sit for 10 minutes. 
  3. In a food processor, combine rice, edamame, breadcrumbs, teriyaki sauce, flax mixture, and salt. Pulse until the mixture holds together (there should still be visible pieces of edamame). Using your hands, form into 6 patties, weighing about 4 oz each. 
  4. Prepare a large skillet with cooking spray and place over medium heat. Sear burger patties on each side until golden brown and heated through. Place in hamburger buns and add ~1/4 cup marinated cucumbers before servings.
