Show Me the Honey

At the IBM Learning Center in Armonk, NY, Chef Will Pfeiffer is taking FLIK’s commitment to “local” and “sustainable” to new height thanks to his brand-new honeybee hives. Over the last six months, Chef Pfeiffer has started an apprenticeship to learn about how to become a beekeeper and started three beehive colonies on-site at the FLIK-managed conference center & hotel.

Thanks to the rise in pesticide use and urbanization, the global bee population has been on the decline, directly effecting the world’s food supply and wildlife biodiversity. Bees are responsible for helping pollinate an estimated 87% of flowering plants and 75% of crops including almonds, blueberries, apples, broccoli, peppers, cherries and more. Conservationists and scientists who study food security are concerned about how the downward trend of bee populations will affect food supply for years to come.

Throughout his career with FLIK, Chef Pfeiffer has taken this practice to heart and this year decided to double down on our commitment, implementing three beehives on campus.

Beelieve it or not, we donned the beekeeper suit and joined Chef Pfeiffer on a tour of the hives to learn about each of the three colonies he’s raising, how he uses the honey harvest on campus, and all the responsibilities it takes to become a beekeeper. 

Next year, Chef has plans to increase the biodiversity of his own colonies by planting wildflowers and adding two additional hives to the space. “This has truly been a passion project of mine and I’m so excited to watch it grow,” he said.

Honey Mustard Roasted Salmon

A simple, light, and delicious protein perfect for dinner - of course, sweetened with local honey. 

Serves: 4 portions 


Ingredients

2 1/2 tbsp whole grain mustard
2 tbsp honey
1 tsp. lemon juice
1/4 tsp. kosher salt
1 1/4 lb. fresh salmon filet, divided into 4 portions

Instructions

  1. Preheat the oven to 425 degrees. Prepare a sheet tray with nonstick spray. 
  2. In a bowl, whisk together whole grain mustard, honey, lemon juice, and kosher salt. 
  3. Place salmon filets onto the prepared sheet tray and top with about 1 tbsp of honey mustard mixture on top. 
  4. Roast for 10 minutes and serve.
