Jerk Spiced Chicken Pineapple Smash Burger, Citrus Jicama Slaw​

Let's celebrate grilling season with our new FIT smash burgers. This sweet and savory burger leaves nothing to be desired. Prepare these burgers out on the grill with a flattop, or smash in a hot cast iron pan. The caramelized pineapple takes this burger over the top!

Jerk Spiced Chicken Pineapple Smash Burger, Citrus Jicama Slaw​

Serving Size: 1 burger
Makes: 5 servings


Ingredients

For the Citrus Jicama Slaw:
3 tsp olive oil
1/4 tsp honey
1/4 tsp sriracha
1/8 tsp salt
1 tsp lime juice
1 ea. poblano pepper
2 1/2 oz. jicama, peeled, julienne
1 oz. orange segments
2 tsp jalapeno pepper, minced
2 tsp fresno chili, minced
2 tsp cilantro, fresh, chopped
For the Burgers:
1/3 cup onion, finely diced
1/2 cup bell peppers, diced
1 1/2 tsp vegetable oil
1 tbsp jamaican jerk seasoning
1/2 tsp salt
1 lb. ground chicken
1/2 cup pineapple, fresh, diced
5 ea. whole wheat hamburger buns
cooking spray

Instructions

Chili Citrus Jicama Slaw:

1. In a bowl, stir to combine oil, honey, sriracha, salt and lime juice. Julienne poblano pepper. Toss together jicama, orange segments, jalapeno, Fresno chili, cilantro, and poblano. Mix with dressing until evenly coated.

Burgers:

1. In a small pan, sauté onions and peppers in oil until translucent. Add jerk spice and salt, remove and chill.

2. Add chilled veggie mixture to the ground chicken and blend. Portion meat into 4 oz. weight balls. Leave balls whole until smashing burgers on flattop. Chill burgers for 1 hour before cooking, or you can allow them to firm up in the freezer.

3. For each burger, place 2 tbsp of pineapple onto flattop prepared with pan spray. Place burger ball on top of diced pineapple and flatten with a spatula until ½” thick. Once pineapple side of smash burger is golden brown, flip burger and continue to cook to internal temp of 165F.

4. Place each burger on a whole wheat bun and top with ¼ cup of jicama slaw.
