Celebrating HERstory: Meet Lindsey Romain, Regional Executive Chef

As we continue to celebrate Women's History Month this March, we're taking time to reflect on how to recognize the women who've paved the future for both women and men today. This year's global theme is "Celebrating Women Who Tell Our Stories" encouraging recognition of women who actively work at storytelling, devoting their lives to producing art and reflecting the human condition throughout time.

This Women's History Month at FLIK, we're honoring the female Executive Chefs who lead the charge in the kitchen and have such a strong impact on the culture at FLIK. You may have caught our first spotlight on Natalie Fernandez last week.

Cooking is the ultimate form of art. It incorporates all the senses -- sense, smell, and taste are the obvious, but sight and taste are equally important to producing incredible, innovative masterpieces. But to be an expert culinarian, passion must come through in each dish. Like artists with a paintbrush or photographers with a camera, chefs use their tools to capture a moment in time and create emotion with a single bite of food.

Meet Lindsey Romain, Regional Executive Chef

Chef Lindsey is a Regional Executive Chef within the Northeast region. Hear the story behind her recipe, Calypso Salmon Burger:

"This recipe is a cultural representation of my heritage. My family is from Grenada and the word Calypso is a genre of music that is listened to throughout the country. Avocados are found throughout the island, as well as mangos. Turning these flavors into a burger, is important to me because it gives someone an opportunity to try something new in a comfortable vessel."

Lindsey Romain’s Calypso Salmon Burger, Pickled Avocado, Mango Compote, Roasted Plum Tomato, and Pepper Jack Cheese on a Brioche


Ingredients

3 pounds fresh salmon filets
1/2 tablespoon Caribbean jerk seasoning
2 cups chopped red onion + 1/4 cup chopped red onion
1 teaspoon fresh lemon zest
1/2 cup light mayonnaise
1 teaspoons ground black pepper
1 cup panko breadcrumbs
1 pound mango, peeled and diced
1/2 pound avocado, peeled and diced
1/4 cup lime juice
1/3 cup chopped fresh cilantro
2 tablespoons minced jalapeno

Instructions

Directions

  1. For the relish: combine mango, avocado, lime juice, cilantro, jalapeno and onion until incorporated in a bowl. Set aside.
  2. Roughly chop salmon. Pulse in a food processor until small pieces are formed.
  3. In a bowl, combine salmon, seasoning, onion, lemon zest, mayonnaise, pepper, breadcrumbs. Mix until evenly distributed. Form into patties.
  4. Spray pan with non stick cooking spray. Cook burgers over medium-high heat.
  5. Place cooked burger on bottom bun, top with mango avocado relish, roasted plum tomato, and pepper jack cheese and top with bun.
