Vegan Portobello Mushroom Chili

We're not known for being traditionalists when it comes to food. (Remember the when we used al dente sweet potato slides in places of crostini and collard greens as a sandwich wrap?) So it will come as no surprise that we're celebrating National Chili Month with vegan chili. Portobellos, with their meaty texture and umami flavor, make for a hearty chili base. We added kidney and navy beans for protein and fiber, but any bean will work, so use whatever you like best! With a hefty spoonful of chili powder and extra veggies for color and flavor, even the traditionalists in your family will be asking for seconds. 

Vegan Portobello Mushroom Chili

Serving size: 1 cup  |  Makes 6 servings


Ingredients

8 ounces portobello mushrooms
2 TBSP canola oil
2/3 cup diced bell peppers
2/3 cup diced carrots
2/3 cup diced onion
1/4 teaspoon cayenne pepper
1 TBSP chili powder
2 tsp ground cumin
1 tsp salt
1-1/3 cup canned crushed tomatoes
1 cup low sodium vegetable broth
1/3 cup canned kidney beans, rinsed
1/3 cup canned navy beans, rinsed

Instructions

  1. Trim portobello mushroom stems. Use a spoon and scrape ribs out from the inside of the mushrooms. Dice mushroom.
  2. Heat oil in a pot. Add bell peppers, carrots, onions, and mushrooms. Cook until vegetables are softened.
  3. Stir in cayenne, chili powder, and cumin. Continue coking until spices are fragrant. 
  4. Stir in salt, crushed tomatoes, and vegetable broth. Bring to a simmer and cook 20-30 minutes. 
  5. Stir in beans and cook until heated through.

Nutrition per serving: 170 calories, 5g fat, <1g saturated fat, 500mg sodium, 26g carbohydrates, 8g fiber, 6g sugar, 8g protein
