Spicy Black Bean Cocoa Soup

Our plant-forward Spicy Black Bean Cocoa Soup has plenty of nutrients and flavor to keep you and your family full and satisfied, so tuck up under a blanket this February and help yourself to a piping hot bowl. 

Serving size: 1 cup  |  Makes 8 servings


Ingredients

12 ounces dry black beans
8 cups water
2 teaspoons olive oil
1-1/2 cups diced onion
2/3 cup diced bell pepper
2 tablespoons diced jalapeno
2 cloves garlic, chopped
2 teaspoons ground cumin
1 bay leaf
2 tablespoons sugar
2 tablespoons dark cocoa powder
2 tablespoons lime juice
1 tablespoon hot sauce
1 teaspoon salt
1/4 cup chopped cilantro

Instructions

  1. Soak dry beans in 8 cups of water overnight.
  2. Transfer beans and water to a large pot and simmer until tender, about 60 minutes. 
  3. Meanwhile, in a large sauté pan, heat oil over medium heat. Add onions, bell pepper, and jalapeno, and cook a few minutes until softened. Add garlic and cook until fragrant.
  4. Transfer vegetables to the pot with beans and water. Add cumin and bay leaf. Bring soup to a simmer for about 15 minutes. 
  5. Stir in sugar, cocoa, lime juice, hot sauce, and salt.
  6. Remove bay leaf. Puree soup using an immersion blender, upright blender, or food processor. Stir in cilantro before serving.

Nutrition per serving: 180 calories, 2 g fat, <1 g saturated fat, 465 mg sodium, 33 g carbs, 4.5 g sugar, 8 g fiber, 10 g protein
