Parmesan Spiced Kale Chips and Popcorn

Did you know that popcorn is a whole grain?  Whole grains are foods that contain the entire part of the grain including the bran, germ, and endosperm.  On the other hand, there are refined grains. Refined grains have the germ and bran removed, which also removes important nutrients like fiber and protein.  

When most people think of popcorn, they think of a night out at the movie theater or even microwave popcorn at home.  Both can be quite delicious at times, but the truth is you can make popcorn at home that is fresher, tastier, and easy on your wallet! All you need is a pot with a lid and your stove.   

Popcorn is typically a salty, buttery snack, but it can also be prepared with a little bit of spice! This recipe includes chili powder, paprika, and cayenne pepper, which gives it a nice kick! This recipe also includes another nutrient dense food, kale! Kale is packed full of some amazing nutrients like iron, vitamin K, calcium, and magnesium!

Kale Chips Popcorn Parmesan

Parmesan Spiced Kale Chips and Popcorn

Our recipe for Parmesan Spiced Kale Chips and Popcorn is the perfect nutrient dense combination of salty, spicy, and crunchy making it a great snack!  

Serving Size: 1 cup  |  Makes 6 servings 


Ingredients

FOR THE KALE CHIPS
1-1/4 cups kale leaves
1/8 teaspoon salt
1/8 teaspoon canola oil
FOR THE POPCORN
2 tablespoons canola oil
1/4 cup popcorn kernels
FOR THE PARMESAN SPICE
1/8 teaspoon chili powder
1/8 teaspoon paprika
1-1/2 teaspoon grated parmesan cheese
1/8 teaspoon cayenne pepper
1/8 teaspoon salt

Instructions

  1. Kale Chips: Preheat oven to 275 degrees F. Remove stems and cut leaves into 2” pieces.  Wash well and spin dry.  Toss with canola oil and sea salt. Place on a sheet pan in a single layer and bake, flipping leaves a few times until crisp, about 20 minutes. 
  2. Popcorn: Add canola oil to a small pot, heat oil until it starts to smoke, add popcorn kernels to hot oil, cover and shake. Remove from heat when corn stops popping. 
  3. In a bowl, combine chili powder, paprika, parmesan, salt and cayenne. 
  4. While kale and popcorn are still hot, toss with prepared spice blend.  Allow to cool before serving.
