Parmesan Chicken, Balsamic Tomatoes

It’s a good thing there are more than 4,000 varieties of tomatoes in this world because there are more than 4,000 applications for them, for sure! We’re sharing two of our favorites this month as tribute to August’s functional food.

This twist on chicken parm is even better than the original, trust us. Our recipe for Parmesan Chicken, Balsamic Tomatoes is baked – not pan-fried – but it’s light coating keeps the chicken breast juicy on the inside and adds a healthy dose of salty parmesan cheese. A fresh tomato topping and balsamic drizzle keep this dish summery and light.

Skinny Chicken Parmesan

Parmesan Chicken, Balsamic Tomatoes

This twist on chicken parm is even better than the original, trust us. 

Serving size: 1 chicken breast + 1/4 cup tomatoes, Makes 10 servings


Ingredients

1 1/4 cups balsamic vinegar
1/2 cup light mayonnaise
1 1/4 cups grated parmesan cheese
10 5-ounce chicken breasts
2 1/2 cups diced tomatoes
2 1/2 cups thinly sliced basil

Instructions

  1. Prepare balsamic vinegar reduction: Pour balsamic vinegar into a small saucepan and bring to boil. Reduce heat to simmer and cook until reduced by half and thickened.
  2. Meanwhile, preheat oven to 350 degrees F and line a baking sheet with parchment paper. 
  3. Rub each chicken breast with 1 tablespoon light mayonnaise and 2 tablespoons parmesan cheese. Place on baking sheet. Bake 20 minutes or until cooked through (internal temperature 165 degrees F).
  4. In a medium bowl, toss together tomatoes, balsamic reduction, and basil. Top each cooked chicken breast with ¼ cup tomato mixture and serve.

Nutrition information per serving: 300 calories, 11 g fat, 4 g saturated fat, 410 mg sodium, 9 g carbohydrates, 6 g sugar, <1 g fiber, 36 g protein
