Ingredients

FOR THE DRESSING
3 tablespoons olive oil
1 tablespoon lemon juice
1/2 tablespoon honey
1/8 teaspoon salt
1/2 teaspoon ground pepper
FOR THE SALAD
8 ounces chopped kale, tough ribs removed
4 ounces peeled orange sections
4 ounces peeled grapefruit sections
1/3 cup crumbled feta

Instructions

  1. Make the dressing: In a small bowl, whisk together olive oil, lemon juice, honey, salt and pepper. 
  2. Prepare the salad: In a large bowl, combine kale, orange, grapefruit, and feta. Drizzle with dressing and toss until well-coated. 

Nutrition per serving: 80 calories, 6.5 g fat, 1.5 g saturated fat, 5 mg cholesterol, 110 mg sodium, 5 g carbohydrates, 1.5 g fiber, 3.5 g sguar, 2 g protein
