Fattoush Salad

Fattoush Salad is a traditional Middle Eastern salad centering around toasted flatbread or pita. These pita “scraps” are thrown into a fresh salad with a variety of vegetables and herbs depending on season and taste. Our Fattoush Salad recipe uses sumac, a tart and citrusy spice available at specialty food stores and Middle Eastern markets. If you can’t find sumac, we recommend substituting lemon pepper seasoning. 

Fattoush Salad

This traditional Middle Eastern Fattoush Salad combines bright herbs, fresh vegetables, citrusy lemon and sumac, and -- of course -- crispy pita. Fattoush can easily be adapted to your tastes, so feel free to add and subtract vegetables and herbs according to your tastes.

Serving size: 1/2 cup, makes 4 servings


Ingredients

1 1/2 ounces whole wheat pita bread
1 teaspoon canola oil
2 teaspoons extra virgin olive oil
1 1/2 teaspoons lemon juice
1/4 teaspoon minced garlic
1/4 teaspoon ground sumac*
1/8 teaspoon salt
1/8 teaspoon black pepper
3 1/2 ounces diced cucumbers
2 ounces grape tomatoes, halved
1/2 ounce red onion, finely chopped
2 teaspoons freshly chopped parsley
2 teaspoons freshly chopped mint
1 1/2 tablespoons crumbled feta cheese

Instructions

  1. Preheat oven to 350 degrees F. Prepare a sheet pan with cooking spray. 
  2. Cut pita into 1” wedges and toss with canola oil. Bake until golden brown and crispy, about 8 minutes. Allow pita to cool and break into smaller pieces. 
  3. Meanwhile, prepare the dressing. In a small bowl, whisk together olive oil, lemon juice, garlic, sumac, salt and pepper.
  4. When ready to serve, combine crisp pita, cucumber, tomato, onion, parsley, mint, and feta in a large bowl. Drizzle with dressing and toss until well-coated. 

*If you are unable to find sumac, we suggest substituting lemon pepper seasoning.
