Started from the Bottom Now Wedge Here

The base of any great Veg Wedge is a hearty vegetable. We recommend a hearty base like squash or sweet potatoes.

Just an idea: roast butternut or acorn squash (Toss raw squash with about 2 tbsp. of olive oil, salt and pepper. Roast in the oven at 350 for 20—25 minutes, or until the squash is fork tender.)

Or go crazy with spices and try Black Pepper Sweet Potatoes (Toss sliced sweet potatoes – about 3 – with 2 tbsp. olive oil, 1/8 tsp. salt and 1/2 tsp. ground pepper. Roast at 450 until crisp and golden brown) or Chili Spiced Potato Wedges (see full recipe below).

Protein is optional and if you opt to go full-veggie with your Veg Wedge, that’s fine with us. If you do want to add some protein, be our guest. We recommend choosing something lean, such as grilled tofu, chicken, or flank steak. May we suggest Spicy BBQ Chicken Breast?

Top It Like It’s Hot

Toppings are your friend. Throw on a heaping spoonful or two of roasted corn, stewed black beans, or freshly diced tomatoes. Really hungry? Add all three! Dollop with fat free Greek yogurt. Garnish with fresh jalapenos and chopped cilantro. Finish with a squeeze of lime. 

When You Dip, I Dip, We Dip

Add a little dip to the table to keep things exciting. Finish your Loaded Veg Wedge with a kick of flavor by pairing them with pico de gallo, mango salsa, tomatillo salsa, or a bit of guacamole!

Chili Spiced Potato Wedges

Chili Spiced Potato Wedges

A twist on loaded fries, try this Loaded Veg Wedge! Choose your veggie base, add a protein, and go crazy with topping combinations. 

Serving Size: 5 wedges, Makes: 8 servings


Ingredients

CHILI SPICE RUB:
2 tsp. garlic powder
1/4 tsp. salt
2 3/4 tsp. ground pepper
2 1/2 tsp. ground cumin
1/2 tsp. onion powder
2/4 tsp. chili powder
2 3/4 tsp. fresh cilantro, chopped (optional)
POTATO WEDGES:
5 baking potatoes
1 tbsp. oil
1/4 bunch green scallions, chopped

Instructions

  1. Preheat oven to 475 ºF.
  2. Mix all ingredients for spice rub together and set aside
  3. Scrub potatoes, dry, and cut each potato lengthwise into 8 wedges.
  4. Toss with oil and lay on baking sheet in a single layer.
  5. Bake at 475ºF until golden brown, approximately 20 minutes.
  6. While still hot, toss potatoes with chili spice rub.
  7. Sprinkle with chopped scallions and serve.
