5 Ways to Use the Bunny’s Bounty

The past weekend is a big holiday for many with plenty of chocolate and colored, hard-boiled eggs. It’s all fun and games until the next day when you have more eggs than you know what to do with. Good thing eggs are versatile and delicious, making it easy to repurpose them in a new recipe.

Bonus for using those hard-boiled eggs instead of throwing them in the trash is to help in the fight against food waste. Since this month is Earth Month and we've made the pledge to Stop Food Waste every day, we couldn’t think of a better time to give these recipes a try.

Whole Grain Breakfast Pizza

Who says pizza can only be enjoyed at lunch or dinner? Try it for breakfast! Try a homemade whole grain pizza dough using your favorite recipe or pick one up at the store. Top with ricotta, sautéed kale, cooked turkey sausage and bake in the oven at 375F for about 10-15 minutes. Remove from the oven and top with hard-boiled egg. Delicious!

Egg-y Guacamole

Who doesn’t love guacamole? Try making your favorite guacamole, but add hard-boiled eggs to the mix. Think of it as the perfect spread for avocado toast – all-in-one!

Savory Oats

Oatmeal isn’t just for fruit and nuts. We love to top our oats with savory ingredients like greens, eggs, and cheese. Try oats topped with sautéed mushrooms or sautéed spinach, chopped, hard-boiled eggs, and parmesan cheese. We also love a sprinkle of Everything Good seasoning from Food by FLIK.

Cobb Salad

The old standby. You really can’t go wrong with a cobb salad. Choose a mix of dark leafy greens like spinach or kale paired with chopped romaine to up the nutrients. Top with your favorite vegetables like cucumber, tomato, carrots, and onions. Add some chopped, hard-boiled eggs, avocado, and blue cheese. If you want to make a cobb with a healthy twist, skip the bacon in favor of roasted turkey and try our favorite homemade greek yogurt, blue cheese dressing.
