More One Pan Dishes to Make This Week

Most of the country started to shelter in place and work from home around March 13th, with distance learning starting for many in April. And let's face it, after around 150 days at home, "What's for dinner?" can be as triggering of a question as "Are we there yet?" 

If you're facing culinary fatigue, we've got your dinner inspiration covered. Here are a few less-mess, less-stress, one-pan dishes to make this week:

Honey Mustard Salmon, Thyme Sweet Potatoes, Shallot Broccoli 

This dish has a little bit of everything -- protein, omega-3s, color, texture, and flavor! Have kids at home? Get their help in the kitchen by having them season and toss the vegetables and help whisk the honey-mustard glaze. 

​Honey Mustard Salmon, Thyme Sweet Potatoes, Shallot Broccoli

Recipe serves 4 


Ingredients

4 salmon filets (5 oz each)
3 tbsp whole grain mustard
1 head broccoli
1 shallot
2 sweet potatoes
2 tsp thyme
4 tbsp canola oil
1/2 tsp. kosher salt
1/2 tsp black pepper
1 tbsp lemon juice (1/2 lemon)

Instructions

  1. Preheat the oven to 350 degrees. 
  2. Wash and scrub your sweet potato to remove any dirt. Dice the sweet potatoes into equal sized pieces and set aside in a bowl. 
  3. Quarter your broccoli head and chop the florets and set aside. 
  4. Slice the shallots and toss with the broccoli. Sprinkle with a pinch of salt and pepper and canola oil. Place on one half of a sheet pan. 
  5. Remove the thyme leaves from their stems and toss with the sweet potatoes. Add a pinch of salt, pepper and canola oil. Place on the other half of the sheet pan in one even layer. 
  6. Place the vegetables in the oven to roast (for about 30 minutes). While the vegetables are roasting, prepare the honey-mustard glaze for the salmon. Whisk together the honey, mustard, lemon juice, with a pinch of salt and pepper. Coat each piece of salmon with about 1 tbsp of the honey mustard glaze. 
  7. After 30 minutes of roasting the vegetables, toss the vegetables and move them to the edges of the sheet pan. Add your salmon to the sheet pan and place back in the oven for 12-15 minutes for the fish to cook and the vegetables to finish roasting.
