Cookie Swap: Peyton's Pecan Caramels

'Tis the season of holiday cookie swaps and to keep things COVID-safe, we've gone virtual! To keep things socially distant, we decided to host a virtual exchange among the FLIK Hospitality team. 

Snowin' and blowin' up bushels of fun, with Peyton's Pecan Caramels, the jingle hop truly has begun! 

Peyton's Pecan Caramels

1 c. butter
1 lb. brown sugar
1/4 tsp. salt
1 c. light corn syrup
1 can (15 oz) sweetened condensed milk
1 tsp. vanilla extract
1 lb. pecan halves


  1. Melt butter in a saucepan, add sugar and salt. Stir thoroughly.
  2. Stir in corn syrup; mix well. Gradually add condensed milk, stirring constantly. Cook and stir over medium heat to firm ball stage (245*F), 12-15 minutes. Remove from heat, stir in vanilla and pecans (optional).
  3. Pour in to a buttered 9x9x2 pan. Cool completely and cut into squares.  Wrap squares individually in wax paper and store in a tin or jar at room temperature.
