Balanced Breakfast: Whole Grain Yogurt Parfaits

November is Diabetes Awareness Month. One way to better balance blood sugar is to pair fiber-rich carbohydrates, such as whole grains, with lean protein and heart healthy fats. Whole grain yogurt parfaits provide the perfect combination of all three of these macronutrients to help keep you feeling fuller longer between meals and snacks. Try one of our tropical recipes or DIY at home. Simply swap out sugary granola for your favorite cooked and chilled whole grain to get a more balanced nutritional bang for your buck.

Farro Lime Pineapple Yogurt Parfait

Farro, Lime, Pineapple, Greek Yogurt Parfait

Makes 1 parfait


Ingredients

1/2 cup cooked farro, chilled
Pinch salt
1/8 teaspoon vanilla extract
1 lime, juiced and zested
2 teaspoons milk
Pinch ground nutmeg
3 tablespoons plain nonfat greek yogurt
1/3 cup diced pineapple

Instructions

  1. In a small serving bowl, stir together farro, vanilla extract, 1/2 teaspoon lime juice, 1/4 teaspoon lime zest, milk, and nutmeg. 
  2. Top with vanilla yogurt. Sprinkle with pineapple. Garnish with additional lime zest. 

Nutrition per serving: 150 calories, 0.5 g fat, 0 g saturated fat, 60 mg sodium, 27 g carbohydrates, 4 g sugar, 2.5 g fiber, 10 g protein

Quinoa Mango Coconut Yogurt Parfait

Quinoa, Mango, Coconut, Greek Yogurt Parfait

Makes 1 parfait


Ingredients

1 cup cooked quinoa, chilled
1/3 cup plain soy milk
1/4 teaspoon vanilla extract
1/4 cup plain nonfat greek yogurt
1/4 cup diced mango
1 tablespoon shredded coconut

Instructions

  1. In a small bowl, stir together cooked quinoa, soy milk, and vanilla extract. 
  2. Top with plain greek yogurt. Sprinkle with mango. Garnish with coconut. 

Nutrition per serving: 360 calories, 8 g fat, 3 g saturated fat, 115 mg sodium, 54 g carbohydrates, 9 g sugar, 5.5 g fiber, 18 g protein
